What We Ate - Easter Weekend

To make sure we didn't eat too much junk over the weekend I started making a few things on Thursday evening, we had a day of relaxation planned for Friday.

First I roasted some vegetables for soup and salad

then had a houmous sandwich or three

In the evening I made some tofu scramble and fried rice

The sauce was really simple, just some soy sauce, agave and sriracha

Friday was treat-filled. Dan made pitta

we had a delicious brunch

Butterbean and squash pasties at the football

There were plenty of leftovers to enjoy on Sunday. A half eaten bowl of leftover quinoa and lentil salad heated up with the remaining pasty filling, smoky and delicious. 

We rounded the long weekend off on Monday with a very welcome nut roast. 

It feels like we've done nothing but cook and wash up!

  2. It all looks delicious. I love houmous and the pitta breads look so good. I might have a go at flatbread this month, I've heard they're really easy. I just need to check out a recipe. Hope you had a lovely Easter weekend. xx

      Anything bready we make is from a River Cottage recipe. When Dan does flatbreads he uses this recipe - For pitta, pizza bases etc he uses the "Magic Bread Dough" from River Cottage Veg Everyday.

  3. You have eaten some marvellous dishes! I like the look of the Tofu Scramble! How do I make it!?!?

      The tofu scramble is really easy, I base mine on the breakfast burrito recipe from Keep It Vegan by Aine Carlin (great book)

      Press a firm block of tofu (I use half a block for two of us), heat a little bit of oil in a frying pan and crumble in the tofu. Mix together 1/4 tsp cider vinegar, a small blob of mustard, 1/2 tsp turmeric, a pinch of salt and a blob of water and mix into the tofu, cook for about 10-15 minutes.

      You can add all manner of things to the scramble, nooch, black salt, vegetables etc, but I am a simple girl!

    2. Forgot to say, don't crumble the tofu too much at first as it will break down as you stir it.
