New New Year

All I want to do is eat fruit and be outside

So says the latest note I've added to the front page of my phone, I have stared out of the window like one of those sad dogs on rescue adverts for the past couple of weeks. I'm neither a great fan of the outdoors nor eating fruit, but I want to remember that it's what I've always wanted.

After a couple of weeks I'm finally starting to feel a bit more like my usual self. We went to the football on Saturday, my first time out of the house for 10 days, other than nipping to the Co-op in the car the night before. Wow, it was tiring! We stumped up cash for the car park as there is no way I'd have got up the hill to the place we usually park for free.

We don't get much snow here so I loved seeing the snow topped hills from my seat and breathing in the cold, crisp air, and eating soup, soup is always good. We went to Little Barista as usual (although there are two new places for vegans to eat in Burnley - One Sixty, formerly Red Triangle, and Gourmet Munchies which is in the market hall). I had the most delicious vegetable and kale soup so packed with veg, lentils and quinoa, served with a slice of toast, I was also offered dairy free spread which was a nice touch. Now it's all I want to eat, so Sunday saw us head off to a farm shop, not the cheapest shop in the world but a nice place for a mooch around.

And I stocked up on goodies, I don't think I've even seen the fridge for about a week!

Couldn't find kale so chose some spring greens instead

I also topped up the pantry

At the start of the year my plan had been to make soup on a Monday and a Thursday, of course that never happened so I'm starting again today. My to-do list today is very short - make soup, put laundry away, it's going to take a while to get my energy levels back to normal, I am still exhausted, but being back in the kitchen feels so good! Tomorrow, I will go outside!

  1. I don't recognize the white vegetable in your last picture. What is it?

    God bless.

    1. It's celeriac/ celery root. Very tasty and versatile, it can be eaten raw in salads , roasted, mashed, I like it covered in breadcrumbs like a schnitzel, delicious!

  2. The best laid plans and all that, Fingers crossed that it is nice enough for you to get outside tomorrow. I made chilli today and half of that will be blitzed into soup. Both will be eaten with some flatbreads that i still have to make.

    1. Chilli is a firm favourite here. The weather isn't great, but I have to brave the charity shop, although I now wish I'd taken another week off.

    1. The farm shop is a bit of a drive away but it was nice to get out and look at all the fresh fruit and veg.

  4. My to do list has been as long as ever despite my attempts at the start of the year to make more time for self - maybe February will be better. I have spent all my time on my little car - which is headed for scrap - I pick up the new one soon. Funny but I will miss my old one- the heater that only worked by the time I got to the car park, the doors that wouldn't unlock and the ones that wouldn't lock and the clunking noise that the mechanics could never locate but always made it sound too dangerous to drive far. Hope you and the car are feeling better!

    1. Glad you have sorted out a new car, we're waiting for our new one to arrive, it's not "new" but it's new to us. Our current car seems fine now but to be honest so much has gone wrong with it I just don't feel comfortable any more.

  6. I'm only just getting back into the swing of things at the CS after almost 3 weeks back. Having just done a four day stretch over the weekend, today, I'm feeling like I physically hit a brick wall and seriously need to decompress. I'm looking forward to February, as life always looks a little more positive once I get through January.

    1. I know what you mean, even though the weather in February can be worse than January there is a little boost from the shorter month and the feeling that spring is on the way. I can struggle on long dark days but I've not really noticed this year due to being ill, which is an odd bonus!

I was sent home from the charity shop yesterday, so I'm still a little way from being back to it.
